TUPPS Leisure Season

Featured Brewery: TUPPS Brewery, McKinney, TX

Brew Club by FRESH

Opened in 2015, TUPPS is located next to the old, historic Cotton Mill in McKinney. They used the design of the mill as inspiration for the brewery, so it would complement the look and feel of the neighborhood. Soon they will be moving into their new location in downtown McKinney, near Local Yocal. They can’t wait to move into this brand new amazing complex that will include a bigger taproom, barrel aging patio and restaurant. Good friends Keith and Tupper started TUPPS to create a beer that is the perfect blend of art and science. They wanted to be creative with the flavors, ingredients and varieties of beer, but were also excited about the brewing process and the science that goes into making a quality, good tasting beer. As proud Texans, deciding to build the brewery in a historic area was important. It displays the experience of the past and what it was like when life was slow and less complicated. TUPPS beer is a great way to relax and become immersed in the feeling of old Texas.

A scientific approach to beer making and a spirit of collaboration is what inspired the creation of Dallas-based Manhattan Project Beer Company. In 2010, Karl & Missy Sanford were planning their wedding and considering their love for craft beer, they wanted to celebrate the union with a new beer that was a combination of two of their favorite styles – Belgian and American Brown Ale. They partnered with friend, Jeremy Brodt, an amateur home brewer, to create the beer. The collaboration was such a success they began researching new brews and officially created the Manhattan Project. Since 2016, their beers have been a hot commodity in the Dallas-Fort Worth area, and they can barely keep up with the demand. They’ve quit their other jobs, grown to being a full-time brewery, expanded their distribution and opened a taproom in West Dallas.

Beer of the Month: Hoppenheimer, West Coast IPA 7.4%ABV, 68 IBU

Aromas of pine, resin, and citrus with balanced flavors of malt and subtle caramel. Medium body and carbonation.

This beer was created for the IPA lovers out there. It is a perfectly balanced West Coast American IPA with huge dank hop aroma. At first sniff, you will detect pine, resin, and delicious citrus. Once you finally steal a sip, you will discover that Hoppenheimer has just enough malt and subtle caramel to keep the IPA characteristics in balance. It has medium body and carbonation.

IPAs can start to blend together with their pine aroma, but this one is different. Because of its balance, it manages to be a hoppy beer you can drink all afternoon.

Sierra Nevada Hazy Little Thing IPA

Hazy Little Thing IPA

Brew Club by FRESH

Featured Beer: Sierra Nevada Hazy Little Thing IPA

Juicy hops and silky malt meet in a Hazy Little Thing with fruit-forward flavor, modest bitterness, and a smooth finish. Aggressively dry-hopped and less filtered because the haze is where the flavor lives.

In this hazy beer, oats and wheat — both malted and unmalted varieties — are critical to the recipe, down to their exact makeup of proteins, beta-glucans, diastatic power, and other beer-nerdy specs. Once the brewing begins, the precise grain foundation interacts with the pre-haze molecules in colossal volumes of lupulin hop dust. This is basically the pure flavor from inside hop cones, to generate a smooth and juicy haze. Sierra Nevada chills their fermenters at slightly higher temperatures than normal so the haze doesn’t fade, then they skip the filter to package the haze in its prime.

“The careful planning of malt and hops, along with less filtering before packaging, yields a beer with lower perceived bitterness than other IPAs and hop character that’s decidedly fruity. You’ll often hear “juicy” as a flavor descriptor, like a tasty bite of ripe citrus. With our Hazy Little Thing IPA, you might pick up notes of orange and pineapple. That’s all hops; we don’t brew Hazy Little Thing with any real fruit.” – Sierra Nevada website. ABV: 6.7%, IBU 35

A German style brewery located on the northwest side of Downtown Houston. It’s an ironic coincidence that the Karbach brewery is located on Karbach Street in Houston which is also the name of a German village in Bavaria. From the very beginning, it was clear they weren’t messing around. Brewmaster Eric Warner had put in 10 years as brewmaster in Maryland. His partners founded a successful beer distribution company, which they later sold to finance Karbach. It soon became a sparkling new facility and the dream became real as they’ve become one of the fastest growing beers in the U.S. Don’t let the cute cans and beer names fool you. When you taste a Karbach beer you’ll admire the craftsmanship, as well as the flavor. Trademarked as a surprisingly bitter IPA, Hopadillo lurks in the shadows, waiting in bold anticipation. He's surprisingly bitter. Bitter about something. Legend has it that he feasts on those with fresh hops coursing through their veins. True Vine officially opened to the public in 2014 in a micro-warehouse on Englewood Avenue in west downtown Tyler. Opening only once a month for brewery events called “Open Taps”, the 2000 square foot brewery and taproom quickly became very small. The community embraced these events from the beginning proving people were truly thirsty for something like True Vine. While on Englewood, the Dixons met some new friends, Jim and Janice Lowden who would soon partner with and help take the vision to the next level. A new location was acquired in fall of 2017 and the now larger True Vine team began creating their new home on Earl Campbell Parkway. After months of hard work, True Vine opened the doors of the Earl Campbell facility in 2018. SAINT ARNOLD BREWING COMPANY

SAINT ARNOLD BREWING COMPANY

Saint Arnold Brewing Company After more than 25 years of brewing, Saint Arnold Brewing Company, located in Houston, is Texas’ oldest craft brewery. Their goal has been to brew world-class beers that are delivered fresh as possible to customers in Texas and surrounding states. The brewery staff is small, but they are dedicated to making full-flavored beers that are crafted for true beer lovers. It’s a passion, not a job, and they believe it comes through in the beers we make. Over the years they’ve created several year-round beers that are well-supported, as well as much-anticipated seasonals and limited-edition series. Founded by beermakers, Brock Wagner and Kevin Bartol, their first keg of beer was shipped in June of 1994. They chose Houston as their headquarters because it was the largest city in the country that did not have a microbrewery. Brock was a longtime homebrewer and had considered opening a brewery as far back as college, although that was quickly dismissed as a silly idea. Seven years after graduating, Brock revisited the idea, enlisted Kevin’s help and the brewery was off and running. Featured Beer: Lawnmower A true German-style Kölsch. Originally brewed in Cologne, this beer is crisp and refreshing, yet has a sweet malty body that is balanced by a complex, citrus hop character. Multiple additions of German Hallertauer hops are used to achieve this delicate flavor. We use a special Kölsch yeast, an ale yeast that ferments at lager temperatures, to yield the slightly fruity, clean flavor of this beer. Lawnmower is a world class brew yet light enough to be enjoyed by Texans after strenuous activities, like mowing the lawn. Brewed since August 2000, many Texans laud Lawnmower’s role in their craft beer journey as a gateway beer. The gateway beer is an eye-opening experience we’ve all had – the realization that beer can be as complex and enjoyable as any beverage out there. It’s been a beer that St. Arnold customers and employees haven’t put down, and it remains an essential and favorite part of their lineup. The Kölsch style and Lawnmower also marry the appeal of ale and lager. It boasts slight fruitiness from the Kölsch yeast, but also a clean finish. It has great floral aroma and bitterness from a noble hop varietal, but never crosses over into being overbearing. Its moderate alcohol content makes it an ideal partner for drinking multiple servings under the Texas sun. ABV: 4.9%, 1BU: 18 Food Pairings: Blackened fish, chicken, salads, and grilled veggies.

In 1997, Mike Stevens and Dave Engbers opened a 9800 square foot brewing facility in Grand Rapids, Michigan and began their dream of making beer, but within 3 years they were on the verge of bankruptcy and blamed themselves for making unremarkable beer. They refused to let the landlord lock them out of the property and adopted the motto, “Brewed for Us”. They started to make the type of beers they liked to drink – ales with big body, complex flavor rich aromatics. They spared no expense, and people began to notice. The next year they debut KBS, a bourbon-barrel aged stout that quickly became one of the highest rated beers in the world. They were on the front end of this new trend in beer making – using bourbon barrels to partially age the beer. From there, their growth and popularity has continued every year and they have enjoyed more than 20 years as one of the fastest growing, most popular craft breweries in the world. Over the preceding decade they have become dedicated fans of “better beer.” They had been avid home brewers as a way to better understand flavors, ingredients and brewing process. Along the way their attention turned to the American craft brewing movement and the boundless innovation, ambition, creativity and entrepreneurial passion that craft breweries represent in the industry. It’s felt through the diversity the brand represents and the Mexican heritage that is celebrated with the artwork and creativity each brew idealizes. Fans of Four Corners celebrate a common passion. The secret behind Paulaner’s excellent taste and unwavering quality is locally sourced ingredients and a tradition of craftsmanship that has been passed down and perfected by dedicated brewmasters. A growing number of people were enjoying the beer, and in 1634 they began producing larger quantities to serve to the Bavarian council and citizens. Over the years, the popularity of Paulaner grew far beyond the city of Munich. The love for Bavarian tradition has made Paulaner a hit around the world. Featured Beer: Altstadt Amber 4% ABV, 25 IBU A full-bodied yet smooth, flavorful brew with a brilliant amber color from a mix of German Pilsner, Munich, and Crystal malts, and balanced out with Saphir and Spalt hops. The aroma is rich and malty with nutty hints. The mouthfeel is smooth and the flavor full-bodied and slightly sweet with notes of toffee. It finishes clean and smooth. Altstadt Amber is made with German-imported Altbier yeast. Altbier is a customary ale brewed in the region of Rhineland and around Dusseldorf. The name represents the fermentation process where the beer is top fermented rather than bottom fermentation like other lager beers. Food Pairings for American IPA Roasted Chicken, Pork, Sausages

BUFFALO BAYOU BREWING COMPANY

BUFFALO BAYOU BREWING COMPANY

Brew Club by FRESH

Rassul Zarinfar and Ryan Robertson started Buff Brewing in 2011 because no one was making the beer they wanted to drink. People were playing it safe. They weren’t taking creative risks, and they weren’t pushing the consumer to challenge the idea of what’s possible in beer. It began as a home brew vision and has developed into a brewing company that has outgrown its expectations a number of times. Buffalo Bayou beers are inspired by the culture of Houston and the people who keep coming back and participating in the growth of the business. Their new Brewtopia, in Houston’s first ward, was built with seed money from local investors. They also have the 28,000 square foot facility on Summer Street overlooking the Sawyer Train Yards and Houston skyline. The first floor houses the brew floor, indoor bar and seating with an adjacent dog-friendly patio. On the second floor is the restaurant overlooking the view of the city. The third floor opens up to a rooftop patio with incredible views of downtown from their Sunset Gallery and Terrace. Featured Beer: Buffalo Bayou Crush City IPA 7% ABV, 60 IBU This bright & citrusy American IPA with Mandarina hops is an ode to Houston; crushable all day, every day. Mandarina cruises a smooth malt body from sip to swallow with a resinous, herbal follow up, finishing crisp and bright. This fun, easy drinking and approachable IPA is an H-Town classic. Food Pairings for American IPA Fried Food, Spicy Cuisine like Cajun, Asian or Mexican.

PEGASUS CITY BREWERY

PEGASUS CITY BREWERY

Art deco design, black and white cans and historic names that bookmark significant moments in Dallas and Texas history, Pegasus City Brewery captures the essence of Dallas and the identity of the community. Named for the Pegasus that was placed atop the Magnolia Oil Co. Building (later becoming Mobil) in 1934, the brewery that started in 2011 has two locations. Originally opening in the Design District and, just recently, in the 1931 Dallas Power & Light building on Commerce Street downtown. Most of the 19 top floors had already been turned into apartments and Pegasus owners, Will and Adrian Cotton, have spent more than a year restoring part of the building’s street level to its original 1930s art deco style. Their core beers consist of the following: Nine Volt, a Tripel dedicated to the art deco style of the iconic Dallas Power & Light building. Cannoneer Amber, named for Angelina Eberly who defended the Texas Archives from thieves by firing a cannon in the middle of Austin. Highpoint Ale pays homage to Dallas’ Mercantile Building, the highest point in Dallas until 1954. Sixth Floor Porter, a dark brew, named for Dallas’ darkest day and the 6th floor of the Book Depository. Texikaner Black Lager celebrates the Mexican and German roots of our great state and the beermaking heritage garnered from each culture. Beer of the Month: Cannoneer Bold Amber 7.4% ABV, 29 IBU This flavorful amber is medium bodied with a crisp finish and light caramel aroma. Made with all-American ingredients, it pairs well with Texas BBQ, golden retrievers and the American Dream. Named in honor of Angelina Eberly, the hero of the Texas Archive War of 1842, its complex malt bill is balanced with just enough hops, making this full-bodied bold amber truly porch approved. Food Pairings for American IPA Aged cheese, grilled sandwiches, pork, caramel desserts

Opened in 2015, TUPPS is located next to the old, historic Cotton Mill in McKinney. They used the design of the mill as inspiration for the brewery, so it would complement the look and feel of the neighborhood. It displays the experience of the past and what it was like when life was slower and less complicated. TUPPS beer is a great way to relax and become immersed in the feeling of old Texas. Beer of the Month: TUPPS Evil Dankster 7% ABV, No IBU Loaded with the latest in dry-hopping products and techniques, this round of Evil Dankster IPA was brewed with Hop Hash. Hop Hash is an extremely potent form of hops that is a raw and unpolished product collected from the pelletizer. This beer is very bitter but has a malt profile that helps balance the strong hops. Purists beware. This might not be the beer for you. Food Pairings for American IPA American IPA pairs well with highly spiced foods like Mexican, Jamaican Jerk, Blackened, Cajun, Korean BBQ or Horseradish

Brew Club by FRESH

Founded in 2013, Community Beer Co. has had the goal to create quality beer that is here for the greater good. Throughout history, beer has brought people together and is a symbol that transcends class, gender, race or identity. They strive to create an atmosphere that influences the local culture and encourages the community to gather and enjoy good company and great beer. They’ll soon further this goal when they open their new 70,000 square foot facility that offers expanded brewery and distilling operations, a two-story taproom, restaurant, outdoor biergarten, multiple event spaces, and a concert venue. The new facility is part of the newly renovated Pegasus Place, site of a former Exxon Mobil campus along Stemmons Freeway, near downtown between the Dallas Design District and the Southwestern Medical District. “Our new home will serve as a hub for beer and hard seltzer lovers across the state, and a gathering place for our diverse community. We will also launch our distilling operations in order to expand our products to include whiskey, vodka, and gin. In addition, this facility will allow us to offer amazing cuisine experiences, host multiple events, and continue charitable efforts through our non-profit organization: The Greater Good,” says Kevin Carr, Community Beer Co.’s founder. “We couldn’t be more excited for the next chapter of our story, and to continue being a leader in Texas’ craft beverage industry and beyond.” Construction on the new facility has already begun, with an expected grand opening in Fall 2021. Beer of the Month: Mosaic IPA 8.6 % ABV, 85 IBU Your go-to tropical, floral American IPA. This beer gets its name from a new hop variety named “Mosaic” which is predominantly where the immense, raw hop aroma and flavor is derived. The hops are strong in Mosaic, but it is not designed to blow your head off with overpowering hop bitterness. Instead, Mosaic is an extremely well-balanced brew that showcases its unique hop aroma and flavor. Mosaic IPA has a noticeable malt backbone to help soften the high level of hop bitterness and flavor, while keeping the body fairly light. The word “Mosaic” is also representative of the diverse range of individuals that make up our community. Food Pairings for American IPA Spicy foods, Asian flavors, pork, ribs, red meat

Amy and Rob Cartwright created Independence Brewing Company in 2004. It all began in 1996, when Amy began working in an Austin pub to pay her way through college at University of Texas. What she didn’t know is that working at the pub would begin a lifelong passion for brewing and a quest to find the perfect IPA. While enjoying an American Pale Ale that her husband, Rob, had brewed she came up with the idea to create Independence Brewing Co. Now they can both put their passion to good use by creating an evolving lineup of classic favorites, seasonals and limited release brews. Beer of the Month: Stash IPA 7.5 % ABV, 94 IBU An enlightening hop trip for independent thinkers and drinkers that you’ll wish would never end. A simple combination of malts – American Two-Row, English Pale, Munich, Crystal, Flaked Barley – acts as the canvas upon which a kaleidoscopic array of six hop profiles groove: citrusy and floral, earthy and dank, piney and resinous. With these powers combined, this is an IPA like no other. Keep your wits about you – you’ll want to remember where you hid your Stash. Food Pairings for Pilsner Spicy and umami flavors, Indian curries, Thai noodles, enchiladas, grilled meats, sharp cheeses, key lime pie

A scientific approach to beer making and a spirit of collaboration is what inspired the creation of Dallas-based Manhattan Project Beer Company. In 2010, Karl & Missy Sanford were planning their wedding, and considering their love for craft beer they wanted to celebrate the union with a new beer that was a combination of two of their favorite styles – Belgian and American Brown Ale. They’ve quit their other jobs, grown into a full-time brewery, expanded their distribution and opened a taproom in West Dallas. Beer of the Month: Necessary Evil, Pilsner 5.3 % ABV, 30 IBU The founders of Manhattan Project don’t usually drink pilsner, but they know there are a lot of people out there who are fans of light beer. So when they decided to create one, they wanted it to be slightly complex and possess a style that even non-pilsner drinkers would appreciate. And so it began, in an effort to round out their beer portfolio, “Necessary Evil” was born. “We set out to create a Pilsner that we would drink. The beer needed to be slightly complex with a bit of our signature style while avoiding everything we dislike about most Pils. Even if we don’t typically gravitate toward lighter beers, we know there are plenty of people that enjoy and even prefer them. Our version of a Pilsner is dry, crisp, and has a hint of hop character. The floral aspects of the hops, not the bitter, so please make sure that H word is never mentioned to your light beer friends. If you get real nerdy during your tastings, you will also pick up on herbal qualities. Like all Pilsners, ours is light in body and color,” From the website, manhattanproject.beer.
