Hatch Chile Guacamole

2 large avocados
1 Roma tomato, seeded and diced (plus more for garnish)
1/4 cup roasted Hatch chile peppers, diced
2 Tbs fresh cilantro, finely chopped (plus more for garnish)
2 Tbs fresh lime juice
1/2 tsp salt
1/2 tsp cumin
1/4 tsp black pepper
1/8 tsp cayenne pepper
tortilla chips, for serving
Directions
Cut open the avocados, and remove the pits. Scoop out the avocado flesh into a large bowl. Use a fork to mash the avocados. Add the remaining ingredients, except the chips. Stir together to combine. Garnish with additional diced tomatoes and cilantro. Serve with tortilla chips.
