Creamy Spinach-Turkey Meatballs

Ingredients
1 (10 oz) pkg frozen spinach, thawed
1 (16 oz) pkg ground turkey
3/4 cup parmesan cheese, grated (divided)
1/2 cup plain breadcrumbs
1/4 cup milk
1 egg, beaten
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 cup Alfredo sauce
fresh parsley, for serving
Directions
  1. Squeeze all excess water from spinach.
  2. In a large bowl, add the turkey, spinach, 1/2 cup parmesan, breadcrumbs, milk, egg, garlic powder, salt and pepper.
  3. Using your hands, combine the mixture thoroughly.
  4. Refrigerate for 1 hour.
  5. Preheat oven to 400° F.
  6. Spray a rimmed baking sheet with nonstick cooking spray.
  7. Using a 1 1/2-inch scoop, shape the meat into 24 balls.
  8. Place on the baking sheet. Bake for 15 to 20 minutes or until instant-read meat thermometer inserted into the middle of a meatball reads 170° F.
  9. In a saucepan, heat Alfredo sauce over low heat. Place meatballs in a large bowl.
  10. Pour in the sauce. Stir to coat the meatballs. Transfer to a serving dish. Top with remaining parmesan. Sprinkle with parsley.
