Ingredients
1cup Sharp Wisconsin Cheddar Cheese - Yellow, shredded
2cups Bold 3 Pepper Colby Jack® Cheese, shredded
12slices Butcher Craft® Extra Thick Cut Naturally Smoked Bacon, Product of Canada, cut in half
8oz Cream cheese, room temperature
½cup Cilantro leaves, chopped
2tbsp Chives, chopped
½tsp Garlic powder
½tsp Crushed red pepper flakes
12 Large jalapeño peppers, halved lengthwise and seeded
12 Toothpicks
Directions
  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
  2. In a bowl, combine the cream cheese, cheddar, colby jack, cilantro, chives, garlic powder, and crushed red pepper.
  3. Stuff the pepper halves with the cream cheese mixture then wrap with a slice of bacon, holding in place with a toothpick.
  4. Place the wrapped jalapeños on the prepared baking sheet and bake for about 20 minutes, until bacon is crispy and the cheese is melted.
  5. Switch the oven to broil for 1-2 minutes to give the bacon an extra crisp.
  6. Remove toothpicks before serving.
  7. Enjoy!
