We like to take a pretty minimal approach to our winemaking and tap into some great sources and make varietally true and focused wines. However, the one part where we get to really flex some skills is during the blending process. In the case of our cabernet sauvignon, we have the option of using small pieces of other bordeaux varietals to make it just so. Aromas of rich cocoa, currant and espresso with a touch of fig and blackberry jam lead to a smooth, medium-bodied wine with dark berry flavors, toasty oak and long, comforting finish.
